The big statue of Buddha (biggest statue) show the great respect of people toward him. Moreover, people believes that the mercy of Buddha is vast, a big statue may portray this fact. The big statue also portray the almighty of Buddha and can diffuse his divine blessing to everyone. His divine protection in earth from the evil spirits or gosh is upon the size of the statue. This concept is very common in all religion. The crucifix is small in private house but very big in church, cathedral, especially in Vatican.

People wanted themj, and make them or give money to have them made, just like people pay to have pictures taken, and stick them in frames, etc.... the statue themselves have very little value to a Buddhist, except as a reminder of various things (depending on the statue). The Buddha's words are infinitely more precious.

Those statues are big in such a way that Buddhists potray the Buddha to be of high status and basically it is just a work of art.
Most statues in the temples are donated by lay devotees as a work of meritorious deed. Some people actually gather 'group' money to sponsor for a particular statue. The more the money is collected, the more the chances a better looking/bigger statue is ensures. The karmic effects of donating Buddha statues is reflected as kusala or beneficial karma.
Just for your information, a temple need not necessarily have a big Buddha statue. While I was living in the forest throughout my wandering as a monk, some forest monasteries hardly have any big, dominant Buddha statues.
Some temples have a dominant statue to reflect on the 'day' the temple is erected (reflecting on the postures of 7 different days), which has certain auspicious meaning towards the locals or the donor of the particular statue to the temple.
